The royal chefs during the Mughal era were particular about giving the food a rich taste and smell while serving the royal banquet. Dum biryani is prepared using the age-old slow cooking method also known as dumpukht (dum meaning `breathe in' and pukht meaning `to cook'). The rice, meat, and spices from Lucknowi are placed in the handi with a little water. The lid is then sealed off with the dough. The bed of coal and steam that builds up from within the Handi finally results in an explosion of flavours.
